White Tea is hand processed using the youngest shoots of the tea plant, with no oxidation. Very delicate, low caffeine
Oolongs are a cross between a black and green tea. Oolongs are only partially oxidized, anywhere between 20 to 80 percent. This yields a tea which has a unique flavour, not as robust as blacks yet not as subtle as greens.
